Leigh has joined The Raven with a background in French classical training which he adapted over a number of years. He has developed his skills and knowledge at many award winning restaurants in the UK.
Leigh’s style of cooking is classic British European with a contemporary twist inspired in his youth by Raymond Blanc whilst training at Le Manoir aux Quat Saisons. He has adapted and developed his style over the years and is inspired by chefs such as Marcus Waring for his motivational attitude towards people and his love of good food, along with the creativity and drive of Heston Blumenthal.
He develops his menu’s using locally sourced seasonal ingredients to support local businesses. Leigh is also keen to develop the hotel garden to complement the Marketplace at The Raven which sells local produce and supplies fresh ingredients to our kitchen.
Leigh is a people person and is passionate about discussing food and menus with customers so they have a detailed understanding of both food and processes. His aspirations for The Raven are to continue producing the fine dining experience in which customers are made to feel both involved and comfortable within their surroundings meaning that the menus are accessible to all.
